To prepare, season, cook and serve catered meals and refreshments for events, meetings and special functions

• Review pre-determined menu or develop event- appropriate menu and plan for food preparation
• Determine amount and type of food and supplies, considering quality and cost
• Ensure availability of food and supplies by reviewing inventory, ordering or pickup at local vendors
• Prepare food, adjusting recipe quantities according to head count and accommodating special diet instructions.
• Pack food and equipment into cargo van
• Transport to site, unloading and carrying food and equipment and setting up for service line
• Portion and arrange food and beverages; serve clients as necessary
• Promote positive public relations
• Comply with all applicable sanitation, health and personal hygiene standards at all times
• Breakdown service line, cleaning service area and returning food and supplies to kitchen
• Clean all equipment and utensils by hand or dishwasher
• Restock shelves as necessary
• Store and label food for future use, as appropriate.
• Serve as a Cook at local facilities as assigned
• Complete multiple handwritten and electronic logs and records regarding production, cooking and refrigeration temperatures, chemical, utensil and food inventories, etc
• recommend and develop recipes and menus

MINIMUM EDUCATION AND EXPERIENCE:

Education above the minimum stated may be substituted on a year for year basis for the required general experience; experience above the minimum stated may be substituted on a year for year basis for the required education.

• High school graduate or recognized equivalent.
• One year of directly-related, verifiable work in catering; experience should also include institutional/cafeteria cooking experience
• Knowledge of nutritional requirements
• Knowledge of institutional food service operation, which involves cooking/serving in a large volume
• Knowledge of computer operation helpful
• Skill in the operation of a variety of institutional kitchen equipment and utensils, both hand, and power operated in a safe and prudent manner, including slicer, mixer, steamer, gas range and steam table
• Skill in operating a computer
• Ability to make arithmetical computations to adjust weights and measurements in recipes
• Ability to read small printed words and numbers accurately
• Ability to positively interact with juvenile residents, and court clients
• Ability to stand and walk for extended periods of time
• Ability to lift and carry 50 lbs.
• Ability to push/pull 60 lbs
• Ability to work in a commercial kitchen environment with various levels of heat and noise
• Ability to operate a cargo van in a safe and prudent manner.
• SPECIAL REQUIREMENTS:
• Must have food handling safety certification or be able to obtain within six months of employment.
• Must have valid driver’s license from state of residence and have or be able to obtain a Class E endorsement for operation of cargo van.
• If driving non-court vehicle for Court business, must have auto liability insurance and properly licensed and reliable vehicle.
• Must be able to provide proof of the above.
