To prepare, season, cook and serve nutritional and well balanced meals for juvenile residents.
75% - Prepare, cook, and serve food in a cafeteria style setting.

• Review daily menus and plan for preparation, gathering utensils and ingredients and adjusting recipe quantities according to daily head count;
• check for food allergies/special diet instructions and plan substitute meal(s), according to instructions;
• prepare, season and cook soups, meats, vegetables, desserts and other foodstuffs for meal and snacks, according to pre-determined menus, recipes, meal counts and portions;
• wash, peel, cut and shred vegetables and fruits;
• measure and mix ingredients using a variety of utensils and equipment;
• observe and test foods being prepared to ensure they are completely cooked and check internal temperatures as required; place food in holding areas;
• properly portion food onto sanitized serving trays or paper carriers;
interact with residents or staff to accommodate allowable meal changes and answer questions

• Determine foods that will be saved for a second use and properly store and label;
• clean serving line equipment and wash all used dishes/pans/utensils, either by hand or dishwasher;
• clean all food prep areas;
• sweep and mop floor and remove trash;
may involve transporting meals to satellite locations.

• Complete multiple daily logs regarding production, cooking and refrigeration temperatures, chemical and utensil inventories, etc., both handwritten and electronic.

MINIMUM EDUCATION AND EXPERIENCE:

Education above the minimum stated may be substituted on a year for year basis for the required general experience; experience above the minimum stated may be substituted on a year for year basis for the required education.

EDUCATION: High School graduate or recognized equivalent.

EXPERIENCE: One year of institutional/cafeteria cooking experience, such as in a school or hospital OR comparable training.

SPECIAL REQUIREMENTS:

• All applicants for this position are subject to testing for illegal drug use prior to appointment.

• Must submit to and pass criminal background check as prescribed by Courts, Sex Offender Registry check, and MO and KS Child Abuse and Neglect checks.
• Final employment offer is dependent on successfully passing physical exam and physical abilities performance testing.
  
• *One designated position is required to deliver meals by van. Employee in this designated position must have valid drivers’ license from state of residence. If driving non-court vehicle for Court business, must have auto liability insurance and properly licensed and reliable vehicle. Must be able to provide proof of the above.

• Knowledge of nutritional requirements; knowledge of institutional food service operation, which involves cooking/serving in a large volume;
• knowledge of computer operation helpful.
• Skill in the operation of a variety of institutional kitchen equipment and utensils – both hand and power operated - in a safe and prudent manner, including slicer, mixer, steamer, gas range, and steam table; skill in operating a computer.
• Ability to make arithmetical computations to adjust weights and measurements in recipes;
• ability to read small printed words and numbers accurately;
• ability to positively interact with juvenile residents.

• ability to lift and carry 50 lbs;
• ability to push/pull 60 lbs.;
• ability to work in a commercial kitchen environment with various levels of heat and noise

• JOB ENVIRONMENT:
  • Employees are protected from weather conditions or contaminants, but temperature changes may occur while working in kitchen.
  • Subject to freezer temperatures and kitchen/oven temperatures when cooking.

• STANDING - 67-100% of time – Food preparation, etc.
• WALKING – 67-100% of time – Food preparation, maneuvering in kitchen, etc.
• SITTING – 1-33% of time – occasional when on computer or completing logs and reports.
• LIFTING/CARRYING - 60 lbs. – Food cases; containers with cooking utensils; sugar and flour sacks, trash bags, etc..
• PUSHING/PULLING – 50-60 lbs. – Appliances, loading trays into vans; loaded food and drink carts, etc.
• VISION – reading instructions and recipes; to cook and use kitchen equipment and machinery; determine quality and completeness of food.
• HEARING – Must be adequate for normal conversation with co-workers, supervisor, youth both in person and over telephone.
• SPEECH – Must be able to speak and understand English clearly to provide detailed information by telephone and in person.
• CLIMBING/BALANCING – Required when negotiating stairs, or retrieving supplies from overhead or from the floor; occasional climbing ladders to reach higher shelves; loading or unloading food carts into vans.
• STOOPING/KNEELING/CROUCHING/CRAWLING – Required when retrieving supplies from overhead shelves or from the floor; loading or unloading food or food carts into vans.
• REACHING/HANDLING – Required on most tasks.
• DRIVING/TRAVEL – if designated; delivers meals by van to other facilities.
